The Need for Innovation in the Food Industry in Wisconsin

In an interview with Wisconsin Public Radion, Professor Paul Mitchell advises that Wisconsin, the country’s second-largest producer of processed vegetables, will need to innovate to keep up with changing consumer preferences. However, consumer taste for canned vegetables has been declining for nearly 10 years, and interest in fresh vegetables continues to grow. In order to keep up with evolving consumer tasters, there is a need to innovate.
