The Heterogeneous Impact of Awareness of Avian Influenza on Meat and Poultry Demand

This study investigates the impact of avian influenza on consumer purchasing decisions regarding meat and poultry products through the lens of web-search behavior. By employing the Exact Affine Stone Index (EASI) implicit Marshallian demand system, I estimate the influence of avian flu awareness on meat and poultry demand among various demographic groups. I also assess the impact of outbreaks on poultry and meat demand with a quasi-experimental design, shedding light on the temporal and spatial dynamics of consumer responses. The results indicate that increased awareness of avian influenza leads to higher chicken demand among white and high-income households but decreases chicken demand among black households during the outbreak period. Furthermore, the outbreak-state demand more poultry products than the non-outbreak- state during the outbreak period due to potential differences in risk perception and information of interest.
